About Paul Hollywood

The son of a baker, Paul originally trained as a sculptor before his father persuaded him to join the family business.

He went onto become head baker at some of the most exclusive hotels, including Cliveden, The Chester Grosvenor and The Dorchester, gaining a reputation as an innovator and one of the country’s finest artisan bakers.

Following his apprenticeship and success at some of the UK’s top hotels, Paul took the opportunity to travel extensively through Cyprus, Egypt and Jordan, visiting remote villages to discover ancient techniques for baking bread, and, on one occasion, travelling to a Bedouin encampment and baking in the desert on an upturned cooking pot.

On his return to the England, he launched the Paul Hollywood Artisan Bread Company, and now supplies Waitrose, and others, with his own branded bread.

Paul began his media career on Carlton Food Network and Taste in 2002 where he co-presented two TV series with James Martin.

Paul has been a judge on The Great British Bake Off (for three series) and Junior Bake Off, and has judged celebrity versions for Sport Relief and Comic Relief all alongside Mary Berry.  In May 2013 he appeared as a judge on the new US version of Bake Off, The American Baking Competition as well as Paul Hollywood’s Bread which was broadcast in the UK in March 2013. Paul Hollywood City Bakes premiered on Food Network South Africa in September 2016 and the second season has been announced to premier in May 2017.

In 2005, he published a best-selling book ‘100 Great Breads’ which has been published in ten countries and seven languages, and was voted ‘Top Bread and Pastry book’ by the Gourmand Academy. His second book ‘How to Bake’, published by Bloomsbury, came out in summer 2012 and quickly went on to the top of the bestseller lists. The book to accompany his Bread series came out in February 2013, with his Pies and Puds book hitting shelves in October 2013 to coincide with the programme of the same name. Paul Hollywood’s British Baking came out in October 2014 and The Weekend Baker was published in 2016. 

Paul makes regular contributions to The BBC Good Food Magazine, Olive Magazine, Waitrose Magazine and has written for both The Observer and The Daily Mail. 

Paul advises and trains at corporate level, working extensively with the Flour Advisory Board, as well as hosting and presenting large demonstrations and award ceremonies.

Thembile's Bread Shop

Thembile Ngcukumeni from Thenbile's Bread Shop in Gugulethu, Cape Town, spent most years of his life leading a healthy lifestyle, until the moment a stroke changed his life forever.  “I became a baker by default, after I suffered a stroke, my friend from BreadRev sent me to a baking course and now I’ve been given the opportunity to start my own business, and I love it! I wanted to reinvent myself and build something for myself” he continues with “I always say that I bake with love, and I feel if someone takes it away, it’s like taking my life away” He doesn't only bake for his own joy, though. The community plays an important part in this bakery; “Currently affordable bread is not sufficiently nutritious. One of the biggest challenges in poor communities in South Africa is lack of education and knowledge about healthy bread. These communities will need to be taught about the nutritional value of stone-ground flour and bread baked using timeless, non-automated methods.” Paul Hollywood and Siba Mtongana visit Thembile to discover how he is changing the bakery landscape of Gugulethu on City Bakes Cape Town.

The philosphy of BreadRev is simple; teach people to bake so they can provide wholesome, artisinal bread to their communities. It was this ethos that drew Paul Hollywood to quaint Kalk Bay to discover how Jeremy Barty is not only sharing his baking knowledge, but also teaching people from townships how they can build their own ovens. Jeremy explains that it's far more than just about learning to bake; “If you look at the poor areas in Cape town, for example,there are no bakers or bakeries. The whole idea behind Breadrev is to encourage all people of all economic spectrums to bake. We build our ovens to function without electricity so the bakery can run without electricity. People struggle to get out of shack lands so we provide bakeries in those areas, to provide for these people.”

Bread Milk and Honey

This family-run cafe in the heart of Cape Town's CBD caught Paul Hollywood's eye with it's counter of traditional South African bakes - specifically their creamy cinnamon-dusted milk tarts. While tasting our local delicacy, Paul was inspired to make a version of his own - with a quintessentially British twist!

Jason's Bakery

Known for it's decadent pastries, and most famously the doughssant (croissant-doughnut hybrid), Jason's Bakery on Bree Street was a must-stop for Paul Hollywood. Asked what makes Jason's unique, Jason himself says He says, “We are always ahead of the trends, and will always be the first on the wagon and everyone will jump on, We like to push boundaries and keep things exciting". In the Cape Town episode, Paul has a go at making the famous doughssant ("He did a great job", says Jason) before tucking into their selection of sourdough bread.

The Kitchen

Famously visited by Michelle Obama in 2011, Karen Dudley's The Kitchen in trendy Woodstock was a natural stop for Paul Hollywood's City Bakes Cape Town. Guided by Siba, they were lured in by delicious Love Sandwiches, glorious salads and an intriguing 'Jaffa Chiffon Cake'.

Crazy Cakes at Charly's Bakery

Quirkiness comes part and parcel when experiencing modern Cape Town and one bakery that holds true to this is Charly’s Bakery. Their trademark pink splashed on the walls is as bright as the personalities hidden behind it and not only is the decor vibrant and wacky, but the cakes and cupcakes are too! Charly’s has stolen hearts and broken diets since 1989 and with it being one of Cape Town’s local landmarks and tourist spots it’s no surprise that Siba Mtongana just had to get Paul Hollywood in for a taste. Not even he could resist a slice of their Amarula chocolate cake! Go grab yourself a slice (or two) just like Paul Hollywood did!

Paul Hollywood Makes Bollas in the Bo Kaap

A visit to Cape Town is not complete without a stroll through the vibrant and colourful Bo Kaap and we’re not just talking about the paint on the houses. Cape Malay cuisine is one of the cornerstones of this community and Paul Hollywood sets out to learn it’s secrets, guided by one of South Africa’s most famous chefs, Reuben Riffel. Together, they explore the neighbourhood’s oldest spice shop, Atlas Trading established in 1946 and learn how to infuse these ingredients into authentic dishes by Gamidah Jacobs (of Lekke Kombuis) who runs cooking classes out of her own home, painted a bright shade of blue.  Her belief in passing the secrets of Cape Malay cooking onto others and keeping the cuisine alive, led her to open her home to foreigners (and local foodies) to pass on her recipes – in Paul Hollywood’s case, for bollas, koesisters and the most delicious, fragrant curry.
