200g unsalted butter, softened

1 ball buffalo mozzarella

1 large ciabatta loaf, sliced in half horizontally

Handful of parsley, roughly chopped

Handful of chives, roughly chopped


For the harissa:

3 red chillies, seeds removed

1 red pepper, roasted, and skin removed

6 garlic cloves, roughly chopped

30g ginger piece, roughly sliced

Salt, a pinch

1 tsp ground cumin

1 tsp ground coriander

Fresh coriander, a handful

4 sprigs fresh thyme, leaves only

2 tbsp olive oil
