2 tablespoons extra-virgin olive oil, plus more for brushing and drizzling

2 teaspoons red wine vinegar

2 teaspoons fresh lemon juice

1 small clove garlic, minced

Kosher salt and freshly ground pepper

3 medium tomatoes, halved

6 spring onions

2 large peppers (any colour), quartered

1 medium zucchini, halved lengthwise

300g loaf ciabatta or semolina bread, halved lengthwise

½  cup torn fresh herbs (basil, mint and/or parsley)

113g thinly sliced salami, cut into 5cm ribbons
