2 large whole eggs

3 egg yolks

3/4 cup sugar

1/2 cup hot chocolate mix

3 cups cream

1 cup full fat milk

60ml espresso, slightly cooled

1 tablespoon vanilla extract

2 tablespoons unsalted butter, melted and divided

510g stale challah or brioche bread, cut into 2.5cm cubes

170g dark chocolate, broken into 1cm pieces
