Cake:
43 grams semi sweet or bittersweet chocolate, chopped
¾ cup hot brewed coffee
1½ cups granulated sugar
1¼ cups cake flour
¾ cup Dutch process cocoa powder
1 teaspoon bicarbonate of soda
½ teaspoon baking powder
½ teaspoon salt
¾ cup buttermilk
6 tablespoons vegetable oil
1 large egg
1 large egg white
1 teaspoon vanilla extract


Buttercream & Assembly:
6 large egg whites, at room temperature
Pinch salt
2 cups sugar, divided
½ cup water
6 tablespoons unsalted butter, at room temperature
1 tablespoon vanilla extract
57 grams semisweet or bittersweet chocolate, melted and cooled to room temperature
2 cups fresh raspberries and/or blackberries
Pink food colouring paste
