Ingredients

 2 tbsp. olive oil

 1.2kg lamb knuckles

 Salt and pepper to taste

 1 tbls unsalted butter

 1 very large onion chopped

 3 cloves crushed garlic

 1/2 tsp ground cardamom

 2 tsp. ground cumin

 1 tsp. paprika

 3⁄4 tsp. ground cinnamon

 3⁄4 tsp. ground ginger

 A good pinch of saffron

 2 1/2 cups chicken stock

 12 Turkish apricots

 6 sundried figs thickly sliced

 2 tbls chopped preserved lemon

 3 tbls chopped parsley

 3 tbls chopped coriander
