2 stems lemongrass

250ml whipping or double cream

2 tbsp caster sugar

5 gelatine leaves

Oil for greasing

For the Lychee and Coconut Granita:

1 tin coconut milk

Juice of a 565g tin of lychees

Zest and juice of 2 limes
