Chocolate Chiffon:

1¾ cups cake & pastry flour

1 cup icing sugar

½ cup Dutch process cocoa powder

1½ teaspoons baking powder

¼ teaspoon salt

1 cup coffee at room temperature

½ cup vegetable oil

5 eggs at room temperature, separated

½ teaspoon cream of tartar

¼ cup granulated sugar


2 cups pitted tart cherries**

1 cup granulated sugar

½ cup water

2 cinnamon sticks

2 tablespoons cornstarch

Whipped Ganache:

1 cup whipping cream

140g semisweet chocolate, chopped

Whipped Cream Frosting:

2 cups whipping cream

½ package cream cheese, softened

1 cup icing sugar, sifted

1½ teaspoons vanilla extract or vanilla bean paste

2 tablespoons instant skim milk powder

Chocolate shavings and candied or brandied cherries for decor
