Salmon and Duck Ceviche

For the Duck Dressing:

1 heaped tbsp chopped ginger

2 tbsp fish sauce

2 tbsp soy sauce

1 tbsp tamarind paste

1 tbsp of grated palm sugar

1 tbsp toasted sesame oil

For the Duck: 

2 x 180g duck breasts

5 tbsp green tea

5 tbsp soft dark brown sugar

A generous handful of perilla leaves (sesame leaves) optional or mint leaves

¼ cucumber finely, sliced and julienned

3 spring onions, finely julienned

Oil for deep frying the prawn crackers

40 uncooked prawn crackers

For the Salmon Ceviche:

400g salmon fillet, skinned

1 tbsp galangal, finely grated

2 tbsp fish sauce

The zest of 1 lime and the juice of 2

1 tsp sesame oil, plus extra for drizzling over

1 tsp grated palm sugar

A handful of chopped mint

6-8 garlic chives, finely chopped
