20cm corn tortillas

1/2 cup Pico de Gallo, recipe follows

2 limes, cut into wedges for serving


4 garlic cloves, minced

1 jalapeno, minced

1 large handful fresh coriander leaves, finely chopped

Kosher salt and freshly ground black pepper

2 limes, juiced

1 orange, juiced

2 tablespoons white vinegar

1/2 cup olive oil

Pico De Gallo:

4 vine-ripe tomatoes, chopped

1/2 medium red onion, chopped

2 spring onions, white and green parts, sliced

1 jalapeno pepper, minced

1 handful fresh coriander leaves, chopped

3 garlic cloves, minced

1 lime, juiced

1/4 cup extra-virgin olive oil

1 teaspoon kosher salt
