Brioche Duck Bunny Chow

For the brioche buns

375g flour

2 tsp salt

50g caster sugar

170g butter, unsalted and soften at room temperature

5 egg, yolks

10g yeast

160g milk

For the duck

4 confit duck legs, flaked

1 red chilli, chopped

2 3cm-long cinnamon sticks

6 cloves

6 green cardamom

2 tbsp ginger, minced

1 onion, chopped

200g chopped tomato, de-gorged in salt for 10 mins

2 tbsp tamarind paste

4 tbsp brown sugar

3 tbsp mint, chopped

75g pomegranate rubies

1 tbsp sesame seeds, toasted

To garnish:

Crispy fried onions

1 tbsps mint, chopped
