Spice Rub
2 t (10 ml) dried tomato, finely chopped
1 t (5 ml) coarse salt
½ t (2.5 ml) freshly ground black pepper
1 t (5 ml) ground coriander
1 t (5 ml) cayenne pepper
2 t (10 ml) paprika
1 t (5 ml) sugar
2 T (30 ml) flour
Chicken
4 chicken thighs and 4 drumsticks

2 T (30 ml) canola oil
1 T (15 ml) butter
2 medium onions, chopped
3 cloves garlic, finely sliced
1 – 2 fresh chillies, finely sliced
2 oranges, zested and juiced
3 ripe tomatoes, skinned and chopped
2 t (10 ml) chicken stock powder
4 whole cloves
