300g Beef bavette
50ml Grapeseed oil
Salt and pepper

1 egg yolk
100ml grapeseed oil
1 lemon, juiced 
1tsp Dijon mustard

200g free range beef bavette, chopped into small pieces
½ banana shallot, finely chopped
1 avocado, cubed
20g flat leaf parsley, chopped
10 coriander, chopped
flaked salt and cracked black pepper to taste

To garnish:
Sorrel, purslane and pea shoots
