600g coconut milk
250g milk
250g cream
110g sugar
6 leaves Gelatine
Coconut aroma (+/- 10 drops)
Rose aroma (+/- 20 drops)
Lime Reduction:
500g Lime juice
200g sugar
70g Glucose
Zest of 5 limes
Lime Syllabub:
200g Cream
Lime Reduction to taste (+/- 1-1 ½ tbsp)
Zest of 1 lime
Rose Foam:
300g Water (warm)
75g Rose syrup
15g sugar
Juice of 1 lime
¼ tsp Soya Lecithin
(If no lecithin, use 1 egg yolk)
