Avocado Dressing:
2 ripe avocados, peeled and cubed 
2 T sour cream 
60g flat leaf parsley, roughly chopped 
1 clove garlic minced made to a paste with  pinch  normal fine salt   
Juice and zest of 1 lime

200g tortilla chips
400g (1 can) red kidney beans, drained 
275g  store-bought tomato salsa 
200g yellow cherry tomatoes, quartered lengthways 
125g cheddar cheese, grated  
3 avocados, sliced lengthways drizzled in juice of 1 lemon 
2 T sliced preserved jalapeños 
1 generous bunch coriander leaves, removed from stem 
2 limes, quartered, to serve
