Ingredients

Shrimp 
30 ml olive oil 
2 garlic cloves, minced 
1½ T thyme, chopped
1 tsp chilli flakes
300 g prawns shelled and deveined
pinch Sea salt 
pinch ground pepper 
Juice from 1 lemon 

Salad 
5 baby gem lettuce, quartered, lengthways + trimmed to create flat surface  
2 avocados, diced  
juice of 1 lemon 

Yoghurt Dressing 
90g plain greek or bulgarian yoghurt 
2 tablespoons milk
pinch fine salt
Juice of ¼ lemon
½ tsp honey

Garnish with 
1 tsp black sesame seeds 
½ tsp freshly ground pink peppercorns
