Ingredients

½ small red cabbage, thinly shredded using processor slicing disc
200 G  brussels sprouts, sliced into thin discs – as above 
120 g radishes, sliced into thin discs  - as above 
1 small Mediterranean cucumber, seedless, sliced into thin discs 

GINGER MINT DRESSING
2 T ginger, grated
2 T apple cider vinegar
4 T lemon juice
4 T canola oil
4 T chopped fresh mint   
4 tsp honey 
2 tsp Dijon mustard
Salt and black pepper, to taste

Top with 
80 g feta, crumbled
3 T pumpkin seeds, toasted – dry fried until pop takes 3 mins
Crack of pink peppercorns
