Roast Chicken Salad

Ingredients

2 chicken breasts 

SUN DRIED TOMATO DRESSING 
6 T thick and creamy mayonnaise – Hellmans regular 
3 T sour cream
3 T milk
1 clove garlic, finely minced
2 T sun-dried tomatoes, drained and finely chopped
pinch salt 
pinch pepper 

Salad 
200g baby spinach, rinsed
150g soft curly kale, rinsed and chopped 
1 stick of celery, chopped thinly (diagonally)
6 T pickled red onion, sliced thinly (see recipe)

Garnish with 
2 T green micro-herbs

PICKLED RED ONION
Makes 1 medium jar

2 large thinly sliced red onion
250 ml water
125 ml apple cider vinegar
1 tablespoon sugar
pinch of sea salt
5 cm piece of fresh peeled ginger
