Ingredients


Lamb 
1 kg shoulder of lamb, butterflied

Spice rub
4 T coriander seeds
1 T cumin seeds
1 tsp ground cloves
½ tsp ground nutmeg
2 tsp brown sugar
4 tsp sea salt
1 tsp freshly ground black pepper
2 T canola oil
6 garlic cloves

Serve with 
120 g tzatziki  

Garnish 
A bunch flat leaf parsley 
2 x lemons, halved and grilled
