Ingredients

2 T salted butter
400 g (1 pack) Israeli couscous
560 ml vegetable stock

Salad 
100 g stoned kalamata olives, drained and halved across the middle
1 Mediterranean cucumber, quartered and sliced  
½ red onion, quartered and sliced thinly
130 g marinated chargrilled artichokes, sliced into 2cm pieces
200 g (mini) baby tomatoes, halved
40 g rocket, rinsed and dried
15 g tarragon, chopped
15 g parsley, chopped 
Juice of ½ lemon 

Garnish
50 g raw almonds, roughly chopped
Olive oil to drizzle
