3 T olive oil
2 T garlic, crushed
125 ml red wine
2 x 400 g best quality tomatoes
pinch red pepper flakes
½ tsp sugar
½ tsp sea salt
pinch of black pepper to taste
1T Chopped fresh basil

Method
1. Heat a large pan (not a pot) and add the olive oil. Add the garlic and just as it starts to sizzle for a minute and add the wine
2. Swirl the pan around and cook uncovered until the wine is reduced over very high heat- takes about 3 minutes
3. Add the tomatoes, chilli flakes and season with sugar, salt, and black pepper. Add the chopped basil. Stir well.
4. Turn the heat down to a gentle simmer and cook until thickened for about 20 minutes.
