       2 tablespoons vegetable or groundnut oil

       1 medium onion, finely chopped

       1 red chilli, deseeded and finely chopped

       2 cloves garlic, minced

       1 inch square ginger, grated

       ½ red pepper, deseeded and diced

       ½ yellow pepper, deseeded and diced

       2 tablespoons Madras curry paste

       400ml coconut milk

       1 tablespoon mango chutney

       1 lime

       1kg monkfish fillet, skinned and trimmed and cut into large chunks

       1 tablespoon fresh coriander, finely chopped plus a little extra for garnish

       Salt and black pepper taste
