       1 large onion, roughly chopped

       2 tablespoon of vegetable oil

       2 bay leaves

       4-5 cloves of garlic, skin on and bashed with a knife

       1 tablespoon black peppercorns

       2 sticks cassia

       2 star anise pods

       1 tablespoon tomato puree

       200ml white wine

       1L lamb stock

       Salt and pepper
