Ingredients

       300g macaroni

       2 leeks, thinly sliced

       600ml milk

       45g butter

       45g plain flour

       1 teaspoon mustard powder

       Truffle oil

       60g breadcrumbs

       225g Cheddar cheese, grated

       75g Parmesan cheese, grated

 

     For the salad:

       4 baby gem lettuces, sliced lengthways

       A handful of chopped chives

       Olive oil

       1 teaspoon Dijon Mustard

       White wine vinegar

       Juice of ½ lemon
