Ingredients

For the piquillo pepper puree:

  • 1/2 medium onion
  • 3 medium garlic cloves
  • 2 medium serrano peppers
  • 8 large piquillo peppers (1 jar)
  • 10g fresh coriander leaves
  • 2 tbsp Cajun seasoning
  • 1 tbsp smoked, spicy pimenton
  • 1 tsp cayenne pepper
  • 1 large pinch crushed chilli flakes
  • 1 tbsp lime juice
  • 3 to 4 tbsp Spanish extra-virgin olive oil
  • Salt and freshly ground black pepper

For the scallops:

  • 20 large sea scallops
  • Salt
  • Freshly ground black pepper
  • Cayenne pepper
  • 4 tbsp extra-virgin olive oil
  • 15g butter
  • Sprig fresh thyme
