Ingredients

  • 240g bread flour, plus more for dusting
  • 220g wholemeal flour
  • Salt
  • 1 teaspoon olive oil
  • 7g active dry yeast
  • Nonstick cooking spray
  • For the sauce:

  • 1/2 teaspoon dried oregano
  • 4 plum tomatoes, cored and roughly chopped
  • 2 cloves garlic, thinly sliced
  • Salt and freshly ground black pepper
  • 5 tbsp fresh chopped basil leaves
  • For the topping:

  • 2 teaspoons olive oil
  • Salt and freshly ground black pepper
  • 240g grated light mozzarella cheese
  • 2 tablespoons grated Parmesan or vegetarian alternative
  • 150g baby spinach, steamed, squeezed dry and coarsely chopped
  • 90g light ricotta cheese
  • Torn fresh basil, for garnish
  • Chilli flakes, for sprinkling, optional
