Ingredients

  • 12 slices Genoa or hard salami
  • 700g good quality minced pork
  • 1 small white onion, grated
  • 2 medium garlic cloves, finely minced
  • 2 tsp salt
  • 2 tsp Greek seasoning
  • 1/2 tsp freshly ground black pepper
  • 8 slices provolone cheese
  • 4 kaiser rolls
  • Creole mayo, recipe follows
  • Red onion, thinly sliced
  • Shredded iceberg lettuce
  • Good quality Italian olive salad, chopped

For the Creole mayo:

  • 180ml good mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp Creole mustard
  • Pinch salt
  • Pinch freshly ground black pepper
