For the Sweet Pastry:

  • 75g icing  sugar, sifted, plus extra for dusting
  • 3 egg yolks
  • 250g plain flour
  • 2 tbsp water

For the Lemon Cream:

  • 5 medium eggs
  • 150g castor sugar
  • 85 ml lemon juice
  • 2 tbsp finely grated lemon zest
  • 150 ml double cream
