Moroccan Style Beef Stew

  • 900g lean boneless shin of beef or braising steak, cut into 2.5cm cubes
  • 2tbsp plain flour
  • Salt and freshly milled black pepper
  • 1tbsp ground cumin
  • 2tbsp Moroccan spices, e.g. Ras El Hanout (available in the spice aisle at larger supermarkets)
  • 3tbsp rapeseed or olive oil
  • 2 medium onions, peeled and finely sliced
  • 2 large garlic cloves, peeled and finely chopped or crushed
  • 600ml good, hot beef stock
  • 400g can chickpeas, drained

For the garnish:

  • 3 tbsp Greek yogurt
  • 2 tbsp freshly chopped mint
