Ingredients

  • 3 tablespoons olive oil
  • Salt
  • Ground white pepper
  • 350 gram piece sirloin steak
  • 2 medium porcini mushrooms
  • 30 grams pre-soaked, dried porcini mushrooms
  • 2 cloves garlic, peeled and thinly sliced
  • 2 sprigs fresh rosemary

For the dressing:

  • 2 garlic cloves, crushed
  • 1 teaspoon mustard
  • 2 tablespoons red wine vinegar
  • 5 tablespoons olive oil
  • 1 tablespoon chopped parsley
  • 1 teaspoon lemon zest
  • ½ red onion, thinly sliced
  • Wild rocket
  • Shaved Parmesan, for garnishing
