Ingredients

For the chocolate cupcakes:

  • 160g unsalted butter, at room temperature
  • 150g sugar
  • 110g light brown sugar, packed
  • 2 extra-large eggs, at room temperature
  • 2 tsp pure vanilla essence
  • 250ml buttermilk, shaken, at room temperature
  • 125ml sour cream, at room temperature
  • 2 tbsp brewed coffee
  • 250g plain flour
  • 90g good cocoa powder
  • 1 1/2 tsps bicarbonate of soda
  • 1/2 tsp salt
  • Chopped salted peanuts, to decorate, optional

For Kathleen's peanut butter icing:

  • 110g icing sugar
  • 100g creamy peanut butter
  • 70g unsalted butter, at room temperature
  • 3/4 tsp pure vanilla essence
  • 1/4 tsp salt
  • 80ml double cream
