Ingredients

For the crepes:

  • 4 large eggs
  • 1 1/4 cups all-purpose flour

  • 3/4 teaspoon vanilla extract

  • Unsalted butter, melted, for brushing

For the filling and topping:

  • 225g unsalted butter, softened
  • 2 3/4 cups plus 1 tablespoon confectioners' sugar
  • 1 cup dulce de leche or butterscotch sauce (jarred or canned), plus more for drizzling
  • 1 cup heavy cream
