Ingredients

For the base:

  • 6 tablespoons unsalted butter, melted, plus more butter  for the pan
  • 500g chocolate digestives
  • 2 tablespoons sugar
  • Pinch fine salt

For the filling:

  • 4 x 225g tubs cream cheese, at room temperature
  • 1 1/4 cups  sugar
  • 1 cup  sour cream
  • 6 large eggs, at room temperature
  • 1 tablespoon pure vanilla extract

For the topping:

  • 1/2 cup double cream
  • 1 cup  pecans
  • 1 tablespoon unsalted butter
  • 1 tablespoon golden syrup
  • 1 teaspoon pure vanilla extract
  • Pinch fine salt
  • 1/2 cup sugar
