For the ice cream cake:

1/2 cup fresh lemon juice (from about 4 lemons)

1/2 cup sugar

Vegetable oil, for brushing

1.5 litres lemon sherbet, softened

1.5 litres vanilla ice cream, softened

8 to 12 soft ladyfingers


For the meringue:

6 large egg whites, at room temperature

Pinch of cream of tartar

1 cup sugar
