For the crust

2 x 225g tubs cream cheese, room temperature

2/3 cup sugar

2 tbsp cornflour

1 tbsp finely grated lemon zest

2 tbsp fresh lemon juice

2 tsp vanilla extract

2 large eggs, room temperature

For the meringue

2 large egg whites

1/4 tsp lemon juice

3 tbsp sugar

1 1/2 tsp cornflour
