Seared Tuna and Crushed Wheat Salad

Ingredients

½ cup crushed wheat (bulgur)

salted water

 

Tuna

200 g fresh tuna steak

 

Tuna rub

2 cloves garlic chopped

2 Tbsp chopped parsley

2 Tbsp chopped coriander, 

Zest of 1 lemon

1 Tbsp olive oil

1/2 tsp cayenne pepper

Salt and black pepper

 

Salad

1 cucumber, seeds removed and cubed

1 punnet (250 g) cherry tomatoes, quartered

4 stems/ ½ bunch spring onions, thinly sliced

125 ml (½ cup) parsley, roughly chopped

 

Dressing

50 ml (1/4 cup) olive oil

Juice of ½ lemon

2 tsp soy sauce

1 Tbsp honey

Salt and pepper to taste

Parsley, for garnishing
