Stuffed Pork Roast with Apple Sauce

30ml olive oil, plus extra to grease

4 bacon rashers

½ cup dried cranberries, chopped

1 large onion, chopped

2 cloves garlic, crushed

2 tbsp chopped sage

400 g (bunch) spinach, stems removed, thoroughly washed, pat dried and chopped

1 cup dried breadcrumbs - regular kind

sea salt and freshly ground black pepper, to taste



2.5kg boned pork leg

10ml sea salt, for rubbing the skin


Apple Gravy

2 tbsp butter

4 apples, peeled and cored – golden delicious

1 cup apple juice or white wine 

2 tbsp apple cider vinegar

1 cup chicken stock

1 tsp Dijon mustard

1 tbsp whole-grain mustard

Meat juices from the oven

Salt and pepper for taste

1 tbsp Brown sugar for taste
