Ingredients

For the dacquoise

1 cup toasted and peeled hazelnuts

1 1/4 cups sugar

6 large egg whites

1 tsp cream of tartar

 

For the caramel mousse

6 tbsp water, divided

3/4 cup sugar, divided

1 tbsp white corn syrup (glucose)

1 tsp powdered gelatine

2 large whole eggs

2 large egg yolks

1 cup whipping cream

Icing sugar, for dusting
