400g mixed frozen berries

Rind of 1 lemon, grated

120g caster sugar

4 tbsp water

For the layers

500g cream cheese

1L strawberry yoghurt

1 large Swiss roll, cut into thin slices

1L ready made custard

250g fresh whole raspberries

250g fresh strawberries, quartered

Fresh mint leaves, to garnish
