200ml sweet soy sauce (ketjap manis)

200g sticky dark brown sugar

90ml olive oil

120g ginger, peeled and roughly sliced

Juice and grated rind of 1 lemon

4 tbsp fresh thyme, removed from stems

2 whole red birds eye chillies; slightly split

6 x tuna steaks
