200g Panko breadcrumbs

70g finely grated parmesan

1⁄2 tsp cayenne pepper

a few springs of thyme picked from their stems

2 medium eggs

salt and freshly ground pepper

4 veal escalopes flattened lightly between 2 sheets of cling film with a rolling pin to create even cooking

3tbsp plain flour

olive oil and butter for frying

lemon wedges to serve
