200g caster sugar

100g ground almonds

50g panko crumbs, slightly stale breadcrumbs or cake crumbs

finely grated zest of 2 unwaxed oranges

finely grated zest of 1 unwaxed lemon

1 1⁄2 tsp baking powder

200ml sunflower oil

4 eggs

For the syrup

juice of 2 oranges

juice of 1 lemon

90g caster sugar

1 cinnamon stick

2 cloves

2star anise

1⁄2 tbsp orange blossom water

Icing sugar, for dusting
