Butternut and Feta Tart

1 x 400g sheet frozen puff pastry

40 g butter

2 onions, thinly sliced

2 cups of butternut cut into little cubes

3/4 cup grated mature cheddar cheese

3 tablespoons chopped fresh parsley

3 eggs, beaten

1 cup cream

2 tbsp grated parmesan cheese

A good pinch of nutmeg

Salt and pepper, to taste

1⁄2 cup snipped chives

1 tsp fresh thyme leaves

2 spring onions with tops chopped

2 rounds of feta cheese broken into chunks.

Fresh sprigs of thyme to garnish
