6 small to medium-sized aubergines

6 Tbs olive oil

1 medium onion, finely chopped

2 cloves garlic, crushed

400 g beef or lambs mince

5 ripe medium-sized tomatoes, very finely chopped

1 tsp dried oregano

1⁄2 cup chopped flat leaf parsley, with stems


freshly ground black pepper

1 cup of medium be?chamel sauce

1 cup of grated pecorino or Parmesan

12 cherry tomatoes


Be?chamel Sauce

2 Tbs butter

2 Tbs flour

1 1⁄2 cups warmed milk

salt, to taste

pepper, to taste

grated nutmeg, to taste

2 egg yolks, beaten
