Pomegranate and Cucumber Salad

For the salad

 6 firm ripe tomatoes diced

 1 red onion finely sliced

 seeds from 1⁄2 a pomegranate

 1 small cucumber peeled, deseeded and diced

 a handful of radishes finely sliced

 2 spring onions finely chopped

 1⁄4 cup roughly chopped mint

 1⁄4 cup flat leaf parsley roughly chopped

 2 tbsp chopped dill


  For the dressing

 3 tbsp olive oil

 1 heaped tsp sumac

 2 cloves of crushed garlic

 1⁄2 tsp chilli flakes

 juice of 1⁄2 lemon

 1 tsp sugar

 salt to season
