950g unsalted butter

14 cups bread flour, plus more for dusting

2 cups sugar

1/3 cup ground ginger

3 1/2 tablespoons ground cinnamon

1 tablespoon fine salt

3 cups golden syrup

2 1/2 tablespoons vanilla extract

Flour, for rolling out the dough

One recipe Royal Icing

 

Royal Icing:

900g icing sugar

3 egg whites

Food colouring, as desired
