Cake:

2 cups pecan halves

2 1/2 cups cake flour

1 tablespoon plus 1 teaspoon baking powder

1 1/2 teaspoons cinnamon

1/2 teaspoon freshly grated nutmeg

4 large eggs

2 cups granulated sugar

1 cup vegetable oil

3 cups finely grated carrots (about 450g carrots)

2 teaspoons pure vanilla extract

 

Frosting:

450g cream cheese, cut into cubes, at room temperature

230g unsalted butter, cut into cubes, at room temperature

2 1/2 cups icing sugar

1 teaspoon pure vanilla extract

Kosher salt

1/4 cup double cream, cold
