Ingredients

Doughnuts:

520 g gluten-free cake flour mix, plus more if necessary

1/2 teaspoon psyllium husk

1 tablespoon instant yeast

210 grams whole milk (about 3/4 cup)

1/3 cup sugar

2 teaspoons kosher salt

2 large eggs, at room temperature

1 teaspoon vanilla extract

60g (4 tablespoons) unsalted butter, cut into cubes, at room temperature, plus more for greasing the bowl

Pure olive oil, for frying (you can also use canola or safflower oil)

 

Sugar Glaze:

1/4 cup whole milk

1 teaspoon vanilla extract

2 cups icing sugar
