¼ teaspoon almond extract

250 grams Puff Pastry dough OR

1 sheet frozen puff pastry, thawed in the fridge

2 large fresh apricots

Turbinado sugar, for sprinkling

 

S’mores Tarts

250 grams Puff Pastry dough OR

1 sheet frozen puff pastry, thawed in the fridge

2 cups mini marshmallows

8 graham crackers

170g milk chocolate bar, cut into chunks or milk chocolate chips

2 tablespoons water, for brushing

 

Salted Caramel Pear Tarts

250 grams Puff Pastry dough OR

1 sheet frozen puff pastry, thawed in the fridge

2 tablespoons water, for brushing

2 ripe Bartlett pears

4 tablespoons packed dark brown sugar

4 tablespoons whipping cream

Pinch coarse sea salt or fleur de sel
