1 cup + 2 Tbsp cake flour

1 Tbsp sugar

½ tsp salt

½ cup cold unsalted butter, cut into pieces

3 Tbsp cold water

1 ½ tsp lemon juice or white vinegar

1 egg white, lightly whisked

 

Lemon Curd Filling

1 cup sugar

¼ cup cornstarch

1 cup water

6 large egg yolks

½ cup fresh lemon juice

2 Tbsp unsalted butter

 

Meringue

4 large egg whites, at room temperature

½ tsp cream of tartar

? cup sugar

3 Tbsp icing sugar, sifted
